Pre-heat oven to 400

Mash 3-4 medium ripe bananas & combine with 1 beaten egg, half a cup milk, 1/4 cup cooking oil

In a separate bowl, combine 1&3/4 cup all purpose flour, 1/3 cup sugar, 2 teaspoons baking powder, 1/4 teaspoon salt

Add banana/egg mixture to flour mixture; stir until moistened; mix in 1/2 cup chopped walnuts and 1/2 cup dried cranberry (Craisin from Costco)

greasing muffin cups with non sticking cooking spray; spoon batter into muffin cups, two-thirds full

Bake in 400 oven for 18 to 20 minutes. (oven varies so please make sure that the muffins are browned; the book says 18-20 minutes but my oven always takes about 25 minutes.)

南瓜炖牛肉-潤肺止咳的菜譜
【材  料】
牛肉、南瓜、姜片、青蔥、洋蔥、

食鹽少量
1.南瓜洗淨切薄片;洗淨牛肉, 切塊,在開水裏飛一下撈出瀝乾待用;

2.湯鍋中放入牛肉塊、姜片,加水,大火煮沸,改小火煮45分鍾;

3.倒入南瓜片,加蓋小火再煮20分鍾至南瓜、牛肉軟爛;

  4.  加入食鹽攪勻調味即食

土豆胡萝卜炖肉

1.準備好食材,馬鈴薯、紅蘿蔔削皮切塊,洋蔥切絲、梅花肉片切成約4cm長大小,所有調味醬料在旁備用

 2.倒入少許沙拉油熱鍋,將梅花肉片翻炒至7~8分熟,取出盛盤備用

3.可以利用鍋內炒肉時剩下的油繼續倒入洋蔥翻炒至半透明狀,再倒入紅蘿蔔、馬鈴薯塊繼續翻炒均勻 

4.倒入醬油露、味醂、水拌炒均勻至煮滾,蓋上鍋蓋轉中小火燉煮約20分鐘使所有鍋內食材入味熟軟 

5.打開鍋蓋,倒入梅花肉片,以中火拌煮約3-5分鐘至煮滾後關火 

6.撒上蔥花,以七味粉做最後調味就完成啦! 充滿媽媽味的馬鈴薯燉肉,暖呼呼上桌
